Dark Chocolate Avocado Mousse with Whipped Coconut Cream is a healthy way to satisfy that chocolate craving!

Serves 4
Ingredients:
♦3 avocados
♦6 oz dark chocolate
♦1/4 cup milk*
♦1/3 cup honey
♦1 1/2 tsp almond extract
♦1/4 cup dark cocoa powder
♦1 orange, zested
♦Pinch of salt
♦1 can unshaken coconut milk, refrigerated
♦1/4 cup chopped pistachios
♦1/4 tsp honey
*To make this dairy free, substitute the milk for almond or coconut milk.
Instructions:
►Put the avocado, milk, 1/3 cup honey, almond extract, cocoa powder, orange zest and salt in a food processor.
►Melt the dark chocolate and add to the food processor. Blend everything together until completely smooth. Add more honey if not sweet enough.
►Pour into four ramekins or bowls, cover with saran wrap touching the top of the mousse so as not to form a skin. Refrigerate for at least two hours.
►When ready to serve, take the coconut milk out of the refrigerator and scoop the solid coconut fat that was separated from the milk into the bowl of a stand mixer. Add about 2-3 Tbsp of the remaining coconut milk and whip until it reaches a whipped cream consistency.
►In a small bowl, coat the chopped pistachios in 1/4 tsp honey. Top the mousse with whipped coconut cream and honeyed pistachios.
