Raspberry Cream Greek Yogurt Pops

These raspberry cream greek yogurt pops are so easy to make. With just 4 ingredients you’ll have these whipped up in no time! Plus, they’re healthy and delicious!

Total Time: 4 hours, 5 minutes
Yield: 10 big popsicles or 20 mini pops

Ingredients
♦12 oz fresh or frozen raspberries
♦1/4 cup + 2 tablespoons granulated sugar
♦2 1/4 cups vanilla greek yogurt (any fat content, 0%,1%, or 2%)
♦1/4 cup heavy cream (half and half works too)

Instructions
✖In a medium bowl, combine the raspberries with 2 tablespoons of sugar and let sit for 5 minutes. In the meantime, prepare the yogurt mix. Combine the 1/4 cup sugar, vanilla yogurt, and heavy cream in a large bowl. Whisk the mixture until all the sugar dissolves completely. 

✖Using a fork, mash the raspberries until they break down. Add the raspberries to the yogurt mixture. Using a spatula just fold the raspberries in for a marbled effect. This will provide both sweet and tart bites. Alternately, you can combine the raspberries with yogurt until an even color forms. This will result in an even flavor distribution.

✖Pour the mixture into the ice pop molds. Cover molds and insert popsicle sticks. Freeze for at least 4 hours or overnight. Remove from molds and serve immediately.

Avocado Toasts with Eggs & Sriracha

Toasted crusty bread smeared with avocado mash, topped with an easy egg and Sriracha. The perfect breakfast.


Ingredients
♦2 slices italian or french bread, toasted
♦1 ripe avocado
♦2 eggs
♦coarse salt and pepper
♦Sriracha

Instructions
✖Place a non-stick frying pan over medium-low heat. Crack the eggs into the pan, season with salt and pepper and cover. Cook until the whites are cooked through and yolk is still runny.

✖Meanwhile, mash half of the avocado with a fork. Season with salt. Spread half of the avocado mash onto each slice of toast. Then, place the eggs on top of each slice of toast. 

✖Drizzle each egg with Sriracha to taste. Serve.

Baked Chicken with Tomatoes, Basil and Red Chillies (A.k.a. Maria’s Chicken)

Chicken thighs are baked up with grape tomatoes, red chiles, and fresh herbs, giving you a hearty, healthy, easy, and delicious dinner!

There’s nothing as easy as a big pan of baked chicken and veggies for a delicious weeknight dinner. And this recipe is so good you’ll be making it for all your guests too!

Serves: 4

It takes 6 minutes to toss everything into the pan for this dinner. If your oven isn’t done preheating in that time, no worries. Slam it in there anyhow. It’ll be ready in 45 minutes to an hour. Go relax for a bit and then put on some rice and toss some salad greens with dressing. Dinner is served!

Ingredients
♦3.5 lbs. skinless bone-in chicken thighs (about 8)
♦1 pint grape tomatoes
♦1-2 red chillies, sliced (don’t even bother to remove the seeds)
♦15 large basil leaves (torn up a bit) plus 10-12 smaller ones for garnish
♦1 Tbsp. olive oil
♦1 tsp. salt
♦½ tsp. coarse black pepper
Instructions
✖Preheat oven to 425F.

✖Arrange chicken pieces in a single layer in a large rimmed pan or baking dish (I use my 12″ cast iron skillet). Topple in the tomatoes. Skatter everything with the chillie slices and the 15 large basil leaves. Drizzle with the olive oil and sprinkle with salt and pepper.

✖Bake until chicken is cooked through, about 45 minutes to an hour. The chillies and basil leaves will be blackened. But they taste good, don’t worry. Scatter the remaining 10-12 basil leaves over top before serving

Lemon Cupcakes with Raspberry Vanilla Yogurt Frosting

Light lemon cupcakes piled high with creamy pink vanilla frosting. With how sweet they taste, you’ll never believe these elegant cupcakes are secretly skinny!

These elegant cupcakes are surprisingly simple to make! The sweet lemon base pairs perfectly with the creamy vanilla frosting for a light and healthy treat. You can make both the cupcakes and the frosting up to a day in advance, but the frosted cupcakes are best if eaten the day they’re assembled.

Yield: 12 cupcakes
Serving Size: 1 cupcake

Ingredients
for the cupcakes
♦2 c all-purpose flour (measured correctly)
♦1 ½ tsp baking powder
♦½ tsp baking soda
♦¼ tsp salt
♦2 tbsp lemon zest
♦1 tbsp unsalted butter, melted and cooled
♦1 large egg, room temperature
♦2 tsp vanilla extract
♦½ c granulated sugar
♦1/3 c plain nonfat Greek yogurt
♦2 tbsp freshly squeezed lemon juice
♦6 tbsp nonfat milk
for the frosting
♦¼ c fresh or frozen and thawed raspberries
♦2 ¼ c plain nonfat Greek yogurt
♦0.5 oz sugar-free, fat-free vanilla instant pudding mix (about half of one 1 oz package; see Notes)
♦1 tbsp Truvia (or other sweetener of choice, to taste)
Instructions
✖To prepare the cupcakes, preheat the oven to 350°F. Line 12 standard-sized muffin cups with paper liners, and lightly mist with cooking spray.

✖In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the sugar, yogurt, and lemon juice until thoroughly combined and no large lumps remain. Alternate between adding the flour mixture and milk, stirring just until incorporated, beginning and ending with the flour. (For best results, add the flour mixture in 3 equal parts and the milk in 2 equal parts.)

✖Divide the batter between the prepared muffin cups. Bake at 350°F for 15-17 minutes, or until barely firm to the touch and a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before turning out onto a wire rack to cool completely.

✖While the cupcakes bake, prepare the frosting. Add the raspberries to a food processor and purée until smooth. Add the raspberry purée, yogurt, pudding mix, and Truvia to a large bowl, and beat with an electric mixer for 4 minutes, or until thick and smooth. Chill for at least 1 hour, or up to 3 hours, before piping onto the cooled cupcakes.

Notes: Some sugar-free, fat-free vanilla instant pudding mixes come in a box that’s slightly larger than 1 oz. As long as the box yields 4 servings, use half of the powder in this Yogurt Frosting (the equivalent of 2 servings). 

You will most likely have frosting left over. Store in a covered container in the refrigerator for up to 1 week. (I highly recommend sprinkling it with granola and fresh fruit for a protein-packed breakfast treat!)

Chicken Avocado Pitas

Healthy and delicious Chicken Avocado Pitas are the perfect summer treat!

Ingredients
♦½ pound shredded cooked rotisserie chicken
♦2 avocados, hollowed and cut into small pieces
♦½ cup plain Greek yogurt
♦1 teaspoon cilantro, divided
♦1 teaspoon garlic salt
♦6-8 cherry tomatoes, quartered
♦4 slices of thin baby Swiss cheese
♦Juice from half a lemon
♦4 whole wheat pita pockets
♦1 tsp. extra virgin olive oil
Instructions
►Cut 1 piece of Swiss cheese into each pita pocket.

►In a small bowl, combine Greek yogurt and garlic salt. Set aside.

►In a medium size bowl, combine avocado, tomatoes, lemon juice, and half of the Cilanto. Set aside. In a skillet, brown the cooked chicken with the olive oil over medium heat for 3-4 minutes. While cooking, sprinkle with half of the cilantro.

►Take off of heat and add ¼ of the chicken to each pita.
Top the chicken with a drizzle of the yogurt mixture followed by a large spoonful of the avocado mixture, all within the pita pocket. Can be served cold, or grilled on a sandwich maker/foreman grill for 2 minutes to serve warm.

Dark Chocolate Avocado Mousse

Dark Chocolate Avocado Mousse with Whipped Coconut Cream is a healthy way to satisfy that chocolate craving!

Serves 4

Ingredients:
♦3 avocados
♦6 oz dark chocolate
♦1/4 cup milk*
♦1/3 cup honey
♦1 1/2 tsp almond extract
♦1/4 cup dark cocoa powder
♦1 orange, zested
♦Pinch of salt
♦1 can unshaken coconut milk, refrigerated
♦1/4 cup chopped pistachios
♦1/4 tsp honey
*To make this dairy free, substitute the milk for almond or coconut milk.

Instructions:
►Put the avocado, milk, 1/3 cup honey, almond extract, cocoa powder, orange zest and salt in a food processor.

►Melt the dark chocolate and add to the food processor. Blend everything together until completely smooth. Add more honey if not sweet enough.

►Pour into four ramekins or bowls, cover with saran wrap touching the top of the mousse so as not to form a skin. Refrigerate for at least two hours.

►When ready to serve, take the coconut milk out of the refrigerator and scoop the solid coconut fat that was separated from the milk into the bowl of a stand mixer. Add about 2-3 Tbsp of the remaining coconut milk and whip until it reaches a whipped cream consistency.

►In a small bowl, coat the chopped pistachios in 1/4 tsp honey. Top the mousse with whipped coconut cream and honeyed pistachios.

Chocolate Hazelnut Sandwich Cookies

Sweet sugar free chocolate ganache sandwiched between two crisp gluten free hazelnut cookies. My low carb version of Trader Joe’s chocolate hazelnut cookies. 

Yield: 18 Sandwich Cookies
Serving Size: 1 cookie

Ingredients
Cookies:
♦2 cups Hazelnut Meal
♦1 tsp baking powder
♦1/8 tsp salt
♦1/4 cup butter
♦1/4 cup hazelnut oil
♦1/2 cup granulated Swerve Sweetener
♦1 large egg
♦1/2 tsp vanilla extract
Chocolate Ganache Filling:
♦3 & 1/2 tbsp butter
♦1 & 1/2 ounces good-quality unsweetened chocolate, chopped
♦3 tbsp powdered Swerve Sweetener
♦1/4 tsp vanilla extract

Instructions
Cookies:
►Preheat oven to 325F and line a large baking sheet with parchment paper.
►In a medium bowl, whisk together hazelnut meal, baking powder and salt.
►In a large bowl, beat butter and hazelnut oil with granulated sweetener until well combined. Beat in egg and vanilla extract.
►Beat in hazelnut meal mixture until dough comes together.
►Roll dough into scant 1-inch balls and place 2 inches apart on prepared baking sheet (you should get about 36 balls). Press balls down to 1/4 inch thickness with the heel of your hand.
►Bake 12 to 14 minutes, until just beginning to brown around the edges and just barely firm to the touch.
►Remove and let cool on pan 10 minutes, then transfer to a wire rack to cool completely (they will continue to crisp up as they cool).

Chocolate Ganache Filling:
►In a microwaveable safe bowl, combine butter and chopped chocolate. Heat in 20 second increments, stirring in between, until melted.
►Stir in powdered sweetener and vanilla extract until smooth. Let sit about 10 minutes to thicken.
►Spread about 1 tsp ganache on the bottom of one cookie and then top with another cookie, bottom-side in.
►Repeat with remaining cookies and remaining ganache.

Notes
Serves 18. Each serving has 3 g of carbs and 1 g of fiber. Total NET CARBS = 2 g.

Irish Nachos Recipe

Oh my goodness!! The Irish sure know how to eat their potatoes!! These look amazing and look like the way nachos should always be eaten.

Ingredients
♦1 1/2 Pounds russet potatoes (cleaned, and sliced 1/4 inch thick)
♦2 Tablespoons olive oil
♦1/2 teaspoon dried rosemary leaves (crushed)
♦1/2 teaspoon dried thyme leaves (crushed)
♦sea salt & fresh ground black pepper (to taste)
♦1 cup shredded sharp cheddar cheese
♦4 - 5 Slices uncured, nitrate free, thick-sliced bacon (cooked and chopped)
♦Greek yogurt or sour cream
♦pico de gallo, salsa, or diced tomatoes (optional)
♦2 minced green onions
♦1 Tablespoon chopped cilantro leaves

Directions
►Preheat oven to 450 degrees.
►Wash and dry potatoes, leaving skin on.
►Slice potatoes into 1/4 inch rounds and place in a large bowl.
►Drizzle olive oil, rosemary, and thyme over potatoes. Stir to combine.
►Place potatoes, in a single layer, on a baking sheet. Bake for 20 minutes, turn over, and continue baking for an additional 20 minutes.
►Remove potatoes from baking sheet and place on a flat-sided cast iron skillet, slightly overlapping the edges.
►Sprinkle with cheese and bacon, and return to the oven for 3 to 4 minutes, or until cheese is completely melted.
►Sprinkle with green onions and cilantro, and serve with Greek yogurt or sour cream.

Healthy Nutella Fudge Protein Bars

The healthiest protein bars in the world -- sugar free, low fat and all natural… no corn syrup or trans fats whatsoever. And the best part? They taste like candy bars!

Calories per serving: 130 calories (vs. 500 in original recipe)
Fat per serving: 4.5g (vs. 21g in original recipe)

Ingredients
♦130g (1/2 cup) Healthy Homemade Nutella
♦1 cup + 2 tbs Unsweetened Vanilla Almond Milk (or milk of choice)
♦1 tsp Vanilla-Flavored Stevia Extract
♦1/8 tsp Pink Himalayan Salt
♦189g (9 scoops) Chocolate Brown Rice Protein Powder (I used SunWarrior)
♦60g (1/2 cup) Oat Flour (can increase this to 2/3 for a firmer bar)

Instructions
►Line an 8" brownie pan with parchment paper both ways.
►In a stand mixer bowl with beater attachment, add the nutella, milk, stevia and salt. Mix on low.
►In a small bowl, stir together the protein powder and oat flour. 
►Slowly add the dry ingredients to the mixing stand mixer. 
►Mix until mixture is even (it should look like cookie dough). 
►Scrape down the sides of the bowl if necessary.
►Dump the mixture into the prepared pan and press/flatten. 
►Cover and refrigerate overnight.
►Slice the next day and serve! 
►Store covered in the fridge.

Notes
When I wanted to bring these protein bars with me to class I put them in a sandwich bag and froze them for a couple hours before leaving. This way they held their shape and didn't get smushed in my purse!
This recipe is: no bake, gluten free, vegan, sugar free, low fat, high fiber and high protein!

Slow Cooker Cream Cheese Chicken Taquitos

Creamy chicken taquitos made in a slow cooker, then rolled and baked til crispy! Soooo yummy and incredibly easy!!

Serves: 4

Ingredients
♦2 boneless skinless chicken breasts
♦1 teaspoon chili powder
♦1 teaspoon garlic powder
♦1 teaspoon cumin
♦salt + pepper
♦8 ounces cream cheese
♦1 cup water
♦½ cup shredded colby or Mexican blend cheese
♦12 6 inch corn or flour tortillas
♦optional: cilantro, salsa, sour cream, or other toppings as desired

Instruction
►Add chicken, chili powder, garlic powder, cumin, salt and pepper to taste, cream cheese, and water to crock pot. Cover and cook on low 8 hours or on high 4 hours.
►Minutes before serving, remove chicken from crock pot, shred with two forks, and return to slow cooker. Give it a stir. Let it cook about 15 minutes longer.
►Preheat oven to 400. Place about ¼ cup of the chicken mixture onto the middle of each tortilla. Top with 1-2 tablespoons shredded cheese. Roll tightly and place in a single layer on a greased baking sheet. Bake 10 minutes, until tortillas are slightly browned and shredded cheese is melted. Serve with desired toppings and sauces.

Mixed Veggie Quinoa with Spinach, Garlic, Tomatoes and Chickpeas

Ingredients
♦1 c quinoa
♦1 tsp olive oil
♦1 tsp garlic powder
♦1 tsp onion powder
♦1 tsp red pepper flakes
♦2 c water
♦1/4 tsp salt
♦1 Tbs lemon juice
♦1 Tbs olive oil
♦6 cloves garlic, minced
♦1 1/2 c bell pepper, chopped
♦1 red onion, chopped
♦6 c fresh spinach
♦1 c cremini mushrooms, sliced
♦3 roma tomatoes, chopped
♦1-2 Tbs dried oregano
♦1 1/2 c cooked chickpeas (or use a 15 oz. can, thoroughly rinsed and drained)
Directions
To cook the quinoa: 
►Put the quinoa into a mesh strainer and rinse under running water for about 2 minutes. 
►Swirl it around with your fingers to make sure it gets really clean. 
►Heat 1 tsp of olive oil on medium-high heat in a lidded saucepan. 
►Add the garlic powder, onion powder, red pepper flakes and drained quinoa. 
►Toast the quinoa in the oil and seasonings for about a minute. 
►Add the water, salt and lemon juice, turn up the heat and bring it to a full rolling boil. 
►Turn the heat to the lowest setting, put the lid on and let it cook for about 15 minutes. 
►Take it off the heat and let it stand covered for 5 minutes, then give it a fluff. The quinoa is ready!

►Combine the tablespoon of olive oil and the garlic in a nonstick pan. 
►Turn the heat to medium and saute for about a minute. 
►Add the rest of the veggies in order, sauteing for about 2 minutes after each addition. 
►Stir in the oregano and chickpeas. 
►Stir in the quinoa.

Trio of Mini Cheesecakes

The most amazing No-bake Mini "Cheesecake" Cups ever, made without dairy and can be made with lots of different flavors.This recipe features a classic graham cracker crust, has the most amazing “cream cheese” filling and is finished with three wonderful toppings. This is the perfect summertime dessert. Sooo good!

Yields: 24

Ingredients:
For the Crust
•1 1/4 cups graham cracker crumbs
•5 tablespoons unsalted butter, melted
For the "Cheesecake" Filling
•1 3/4 cups soaked raw cashews, drained (soak in water for at least 4 hours or overnight)
•7 tablespoons lemon juice
•6 tablespoons honey
•1/4 cup coconut oil, melted
•1/2 teaspoon vanilla extract
For the Raspberry-Lemon Topping
•1/4 cup frozen or fresh raspberries
•1 tablespoon lemon juice
•zest of 1/2 lemon, optional
For the Mango-Lime Topping
•1/4 fresh or frozen mango chunks
•1 tablespoon lime juice
•zest of 1/2 lime, optional
For the Chocolate-Caramel Topping
•Chocolate Syrup
•Caramel Sauce

Instructions
✖Preheat oven to 350 degrees F. Line two mini muffin pans with paper liners (24 total).

✖Combine graham cracker crumbs (I have found that it is easiest to crush graham crackers in a ziptop bag with a rolling pin or pulse them in a food processor for a couple of seconds) with melted butter until fully incorporated. Press about 2 tablespoons of the graham cracker mixture into each lined muffin tin. Put in the oven and bake for 10 minutes or until crust is golden brown. Set aside.

✖In a blender, mix together soaked cashews, lemon juice, honey, coconut oil and vanilla. Puree until smooth and no chunks remain. Pour cheesecake mixture into each muffin tin until about 3/4 full.

✖Rinse out blender and puree together raspberries and lemon juice until smooth. Equally top 8 mini cheesecakes with raspberry-lemon puree until almost full. Using a toothpick, create the swirl affect. Finish with lemon zest.

✖Repeat step 3 with the mango-lime topping.

✖Top remaining 8 mini cheesecakes with as much chocolate syrup and caramel sauce as desired. Create a pattern using a toothpick as well.

✖Place pans in the freezer and let set, about 4 hours or overnight. Remove 15 minutes before serving from freezer for perfect cheesecake consistency.

Notes
Mini Cheesecakes will keep up to 2 weeks covered and stored in the freezer.
